This may be of no interest to anyone, but I learned a lot watching this video of someone who clearly knows what they're doing put together a double stitch t-shirt from start to finish (they make two in the video, one with a different stitch on the neck):

After I watched it, I wasn't totally clear on the difference between the stitchings used at the neck (overlocked vs cross-stitch) and I found this other vid which gives a great explanation of that. If you're wearing a double stitch tee while you're reading this, probably both of those techniques are happening on the shirt you're wearing right now:
